Slow Performance for Adding new customers

Here's our setup:

2 Client Stations. Running Windows XP SP3. 3.39 GHz Pentium D. 1.97GB RAM
1 Client Station Running Windows 7. Intel i3 3.07 Ghz, 4 GB RAM.
1 Server Station Running Windows 8. Intel i5, 3 Ghz, 8 GB RAM // We sometimes use this as a client station when we get really busy.

2 Thermal Printers. Connected through Ethernet
1 Kitchen Printer. Also Connected through Ethernet

Toppings: 52
Items: 257
Customers: 21,133
Streets = 36,205 // Imported from V5


The problem is, when we enter new customers, it takes about 20 seconds to load the information but with old customers, we get to the main order entry less than a second. The weird thing is.. this occurs 1 out of 5 times. What can we do to always make the adding process as fast as possible every time?

This behavior is not typical of the POS system, but does sound like there is an issue on your physical network. You will need to troubleshoot it using a packet sniffer, or by process of elimination.

Another quick point:

Make sure that no power management stuff is on (since you say that it is intermittent). Check the HD and make sure that it's not spinning down, and the network adapters that none of them sleep, especially on the server PC.

Ok. Do you have any recommendations for a specific packet sniffer?

Wireshark is a good one. Run it on the PC that gives you issues, so that you can examine the packets. If your switch supports PORT MIRRORING then you can monitory the trouble PC from a 3rd PC (best way).
