Go into regional settings in the Windows control panel, and set the currency symbol there.

I’ve checked that but that’s set correctly, it prints reports with a pound sign, just not receipts, even if I send the receipt to a a4 printer

Go set the currency symbol explicitly. There is a space where you can manually override it.
  1. Go into Region and Language in the Windows control panel
  2. On the Formats tab, click the Additional Settings button
  3. Select the Currency tab, and manually insert the character that you want for your currency symbol in that location
  4. Click Apply, and Ok to save these changes.
The symbol used there will show up in POS Pizza as the currency symbol as well.

I'm really not sure what to tell you as we have many customers in the UK, and the Sterling symbol has worked fine for them.

The POS system only pulls the currency symbol from Windows, so that's where it has to be adjusted.
